A traditional Tibetan-style dumpling filled with flavorful chicken mince, served with a spicy tomato and peanut chutney.

Mix wheat flour and refined flour with a pinch of sugar and a few drops of white vinegar.
Add water gradually and knead into a smooth dough, being careful not to overwork it.
Cover and let the dough rest for at least 30 minutes.
Prepare the filling by mixing chicken mince, chopped scallions, coriander stems, green chillies, white pepper, soy sauce, garlic paste, and chopped ginger.
Set the filling aside and start preparing the chutney.
In a pan, cook tomatoes with water, salt, and red chillies until they soften and the water dries up.
Separately roast peanuts and add them to the tomato mixture.
Add garlic and optional whole coriander to the mixture.
Blend the chutney mixture into a smooth or chunky paste, as preferred.
Divide the dough and roll into small discs, then fill with the chicken mixture and shape the momos.
Prepare the steamer by placing cabbage leaves at the base and brushing with oil.
Steam the momos over boiling water for about 10-12 minutes until cooked through.
Serve hot momos with the prepared spicy chutney.
